A number, such as #220 or #1000, indicates the roughness of a whetstone.
Natural whetstones are not uniform in grain and may not suit some blade materials.

Since it is a natural stone, it may crack due to temperature difference, humidity, or impact. After use, it is best to remove water well, wrap it with a towel or other cloth and store it in a dry place.
Avoid storing the product where it gets wet or where there are sudden changes in temperature

Iyo TOISHI
A stone used to sharpen knives is called ¡ÆTOISHI¡Ç in Japanese. In the JOMON period, stones were also polished with harder stones, and whetstones have been found in ruins.
Today, most people use cheaper artificial whetstones, but many cooking professionals and Japanese sword sharpeners use natural whetstones for the final finish, as they desire the softness of natural stones.
Artificial whetstones, which are mainly made of carbon and alumina, have angular particles that can sharpen the work more than necessary. Natural whetstones have rounded particles, allowing for fine adjustment of sharpening.
TOISHI from Iyo, Ehime Prefecture, which is made of hardened sandstone, is attractive not only for it¡Çs sharpening ability but also for the beauty of the stone itself, with its different colors and patterns.
Just displaying it with knives in a room is a nice interior design, but how about sharpening knives in the kitchen with a natural Japanese whetstone?
